I rinsed them with 1/4 cup of vinegegar per gallon of water about 6 times after bucking and they were still dark. I did use wood ashes to buck. I ran out of time and had to freeze (i travel for work)....

If you rinsed well, they should't be ruined. It's possible that you may not have gotten the membrane layer off... With a dull wet scraper, you can scrape pretty hard while fleshing, being more careful...
